Keto Chocolate Chip Dough Bites

Any of my keto friends ever have a day where the sugar trolls in your head are working overtime to get you to stop the car at your nearest drive through and get something completely not keto? Yes? No, just me? I had to fight them HARD today, kept telling myself ‘just get home, you’ll find something there’ that something is usually a string cheese, macadamia nuts, something quick and easy to quiet the trolls. Today, however, there was NOTHING except an almost empty bag of my beloved Lilly’s Chocolate Chips. Ordinarily there’s nothing wrong with a small handful, today I just knew I needed a little more substance (fats and protein) or I’d be back at the fridge in an hour!

I decided to pull out ingredients to make chocolate chip cookies and see if I could whip up something close to cookie dough quickly.

I’ve made keto cookies before but I wasn’t about to wait to bake anything, I just wanted quick, edible dough with no eggs. Five minutes later and a little tweaking of the measurements, I made what I consider close enough to cry tears of joy over!

My recipe made 13 dough balls with my large cookie scoop. I encourage you to calculate macros for yourself with your ingredients since some are labeled differently and your scoop might be a different size. Also, I like using powdered sweetener because it’s not gritty like the granulated kind. Store them in a closed container in the fridge.

Keto Chocolate Chip Dough Bites

Ingredients

  • 6 Tbsp Butter
  • 1.5 cup Almond Flour
  • 4 tbsp Powdered Sweetner like Swerve
  • 1 tbsp Vanilla Extract
  • 1 tbsp MCT Oil
  • .5 cup Lilly's Chocolate Chips

Instructions

  • Mix butter, almond flour, sweetener, vanillla and MCT oil with a mixer until soft dough ball forms.
  • Add chocolate chips and stir by hand.
  • Scoop onto parchment paper lined cookie sheet or tray.
  • Chill for harder consistency, then store in a closed container in the refridgerator.
